Abstract

Physicochemical analysis performed using the data acquired by DSC, EPR, as well as static, dynamic, and electrophoretic laser light scattering allowed us for the first time to reveal the fact that plant antioxidants possess a significant structure-forming potential in addition to their antioxidant activity. They are actively participating in the formation of both local and overall structure of biopolymer-liposomal complexes, which is accompanied by a significant increase in the protective capability of such delivery systems against autoxidation of omega-3 and omega-6 PUFAs encapsulated in them.
