Abstract

This study explored the impact of bovine serum albumin (BSA) on the antioxidant and anti-inflammatory activities of Arbutus unedo leaf extract and its polyphenolic compounds. HPLC-MS analysis identified compounds like quinic acid, arbutin, and flavonoids.
