Steamed PS retained better structural integrity with higher viscosity. Microwaved and roasted PS received higher sensory scores and similar textural properties. Regarding color, microwaved and roasted PS received the highest brightness value (<em>L</em>*), with moderate redness (<em>a</em>*) and yellowness (<em>b</em>*) values. Abstract
