Furthermore, the levels of bioactive compounds, including polysaccharides, polyphenols, flavonoids, and saponins, were significantly elevated, which enhanced antioxidant activity and may have improved bioavailability. FTIR analysis confirmed the structural changes in the active compounds after fermentation.
