Abstract

The study examined the impact of glycation with five-carbon and six-carbon monosaccharides on the structure and physicochemical properties of coconut protein isolate (CPI). The Journal also publishes Review articles that provide an overview of the latest developments in topics of specific interest to researchers in this field of activity.
