Soluble polysaccharides formed a network structure in the continuous phase, and the insoluble polysaccharides dispersed in the continuous phase, acting as a bridge structure, which worked together to prevent oil droplet aggregation. Abstract

The ultrasound-assisted extraction conditions of Thesium chinense Turcz. crude polysaccharide (TTP) were optimized, and a TTP sample with a yield of 11.9% was obtained.
