The chroma of <em>T. tuberosum</em> Ruiz &amp; Pavón flour was higher than the other samples, which was related to total carotenoids and lycopene. Furthermore, <em>I. batatas</em> (L.) Abstract

Andean roots can be used as an alternative to gluten-free food.
