This strategy essentially qualitative, allowed us to analyze the consequences of transitions households own products and traditional farming systems, the economics of quality that characterizes the New European Rurality has had a special development in Spain for the strong implementation European Initiatives LEADER I, II and + from 1991. To this end, and based on a complex and systemic perspective, we study different production systems of farming families Cheesecake Sierra de Cadiz, this perspective to analyze the changes that led to generate two different but complementary models: the artisanal and industrial. Our work demonstrates the resilience of family economies of traditional cheesemakers producers, who continue to coexist with new industrial producers in the competitive market for quality food products.
