According to the above, it is not enough to state that a tourist destination is rich in natural resources and that they have innate beauty, it is necessary to have a tourist infrastructure capable of meeting the tastes and preferences of tourists and visitors. However, the internal or organizational management of the providers influences, to a great extent, the experience and perception that can be created by a tourist visitor. The purpose of this chapter is to analyze the integral management of the hotels that provide services in the municipality of Santiago de Tolú, located in the Department of Sucre, Colombia; the conduct of the study required the analysis of environmental variables in the hotel industry, as well as the application of a structured survey, in order to further study the key aspects of management. Broadly speaking, the results show that management has been based on a family structure with transgenerational dyes, which has made it difficult to implement new administrative practices. Similarly, there are key aspects that, in the management framework, managers and executives have overlooked, such as having a business plan.
