Penelitian ini bertujuan untuk mengetahui tingkat minat masyarakat Desa Ekas Buana terhadap olahan buah lamun (Enhalus acoroides). Metode yang digunakan adalah metode metode observasi, ekperimen dan kuesioner. Penelitian ini dilakukan pada tanggal 1 September sampai 25 Oktober 2021 di Desa Ekas Buana Kabupaten Lombok Timur. \nUntuk menguji tingkat minat masyarakat Ekas Buana terhadap olahan buah lamun dalam penelitian ini dengan mengunakan uji skor (scoring test). Berdasarkan hasil uji organoleftik menunjukan bahwa responden terhadap olahan fillus buah lamun memberikan pengaruh berbeda nyata pada rasa, kerenyahan, dan aroma. Perlakuan terbaik berdasarkan penilaian responden adalah p3, pada rasa dengan nilai 4,73, kerenyahan dengan nilai 4,75, dan aroma dengan nilai 4,93. \n \nKata Kunci: Tingkat Minat;Olahan Lamun; Pare Mas; Lombok Timur. \n \nABSTRACT \nSeagrass is a monocot plant that has rhizome roots, leaves, flowers and fruit. This study aims to determine the level of interest of the people of Ekas Buana Village towards processed seagrass (Enhalus acoroides). The method used is the method of observation, experimentation and questionnaires. This research was conducted from September 1 to October 25, 2021 in Ekas Buana Village, East Lombok Regency. \nTo test the level of interest of the people of Ekas Buana towards processed seagrass in this study using a scoring test. Based on the results of the organoleftic test, it showed that respondents to processed seagrass fillus had significantly different effects on taste, crispness, and aroma. Lamun merupakan tumbuhan berkeping tunggal (Monokotil) yang mempunyai akar rimpang (rhizoma), daun, bunga, dan buah.
