Abstract
: The production of quinoa protein hydrolysate (QPH) using two technologies to extract the oil and separate the phenolic compounds (PC) prior to enzymatic hydrolysis were evaluated: (1) Supercritical fluid extraction (SFE), and (2) Conventional solvent extraction (CSE).
