There is a constant concern with the method of preparation and marketing of acai, given that some traders do not use good manufacturing practices, do not have proper hygiene with the utensils used to remove the fruits, or where they will be placed after being beaten. Besides the concern with the residues that are left after the fruit is processed. From the research carried out with the acai berry sellers of the city, the objective is to understand what are the difficulties to acquire and to commercialize, besides searching for a solution to the residues resulting from the fruit processing. The work was based on exploratory research because it is exactly as the previous situation suggests. The purpose of this type of research is to familiarize yourself with a subject that is still unknown or little explored. At the end of the research, the researcher will know more about that subject, and will be able to build hypotheses and, as with any exploration, there is a dependence on the intuition of the researcher who is conducting the exploration. Taking into consideration that the municipality of Capanema is the pole city of the Caetés Region, it is soon observed that 70% of the suppliers of this product to the acai sellers are from the cities belonging to this region.
