Abstract
Adulteration of coconut wines are prepared by simple dilution of original beverages. Methanol, Ethanol, and Ethylene Glycol are the chemicals that constitutes health hazard when consume beyond the standard volume. PCA is a technique fit for giving a diagram of multivariate information that are complex and used for uncovering the relations amongst factors, tests, distinguishing exceptions, creating new theories and numerous different variables. SIMCA as a class analogy is a measurable technique for managed order of information. This paper determines the percentage of methanol using NIR Spectrometer based on PCA and SIMCA that will detect and determine chemical content such as Methanol, Ethanol, and Ethylene Glycol that mixed with Coconut wine. The analysis was carried out by the application of PCA and SIMCA and were analyzed with good results to verify adulteration. Also, the state of the lambanog were determined whether adulterated or not adulterated.
