Abstract
Anthocyanin extract of orchid flower, Dendrobium Sonia ‘Red Bom’, (DSAE) showed multiple color variation as pH of the solutions varied. It gave red, violet, blue, green, and yellow at pH 2–11.0. Discoloration of the solution was observed in the pH range of 4–6. The red (pH 3) and violet solutions (pH 7.0) of DSAE were found to be most stable and did not produce brown precipitate on storage for at least 72 days at 4 °C. The violet DSAE was relatively less stable compared to red DSAE at 37 and 45 °C. Yellow DSAE (pH 11.0) was more stable than blue (pH 8.5) and green DSAE (pH 10.0). The red and violet DSAE have potential applications for acidic and neutral food, cosmetic and pharmaceutical products while yellow may be of use in other industries.
