The water holding capacity, expansibility and fat adsorption capacity of insoluble dietary fiber were 4.9g/g, 4.6mL/g , and 3.2g/g , respectively. The extraction yield of dietary fiber from jujube residue was higher,and its physicochemical characteristic was good. 摘要

为充分利用枣渣,采用辅助碱法制备枣渣不溶性膳食纤维。研究了不溶性饲料的保水能力、膨胀性和脂肪吸附能力等功能特性。通过正交试验得到的最佳工艺参数为:NaOH浓度0.4mol/L、浸泡温度50、8451、65292、浸泡时间120 min、研磨粒度60目、不溶性膳食纤维得率为73.1%。不溶性膳食纤维的持水量为4.9g/g,膨胀性为4.6mL/g,脂肪吸附量为3.2g/g。从枣渣中提取膳食纤维得率较高,其理化特性良好。发展前景良好。
