摘要

采用Hagberg-Perten法对3种农业制度和2种储存方式的小麦粉样品在1年的储存过程中可滴定酸度和下降数的动态变化及其相互作用进行了评价和比较。结果表明,经过生物、生态农业和干法贮藏(无温控)后的样品,其酸度升高与α-淀粉酶活性降低之间存在较强的相关性。集约化农业和低温贮藏(T +6±20 s)可使这些指标独立变化,并使贮藏后期的技术性能更好。

Relation between Hagberg-Perten falling number and acidity of wheat flour according to storage and agricultural systems
