摘要

近年来,南黄海连续发生绿潮,引起了广泛关注。为了为绿潮藻的综合利用提供依据,根据国家标准,本研究对2010年江苏和山东采集的绿藻进行了基本营养成分、叶绿素、氨基酸、矿质元素和重金属的分析。结果表明:碳水化合物是这些绿潮藻的主要营养成分,占35.82% ~ 52.43%;粗蛋白质含量变化较大,在31.04% ~ 12.11%之间;脂肪含量较低,均小于1%;叶绿素含量差异显著,随着采收日期的推迟,含量显著降低;氨基酸含量较高,必需氨基酸占风味氨基酸的比例高达37.45%其中天冬氨酸、谷氨酸、甘氨酸、丙氨酸含量较高,矿质元素含量丰富,Ca、Fe、Zn含量明显偏高,但重金属Pb、Hg、Cd均低于国家标准限定要求。附着样品的组成没有明显变化。
