The growth was monitored in beef samples stored at room temperature and under refrigeration. A cultural procedure using sorbitol MacConkey agar was used for comparison. The correlation between counts of E.coli O157:H7 using these procedures was high: 99.1% for samples kept at room temperature and 94.9% for those kept under refrigeration.
