From the research, digital image processing is capable to detect the blue color changes in the titration solvent. 摘要

水果中抗坏血酸的测量可以通过各种方法来实现。通常用于测量抗坏血酸水平的方法是碘量滴定法。本研究将数字图像处理和颜色分割应用于碘量滴定法测量抗坏血酸水平,因为滴定的终点指示剂是滴定溶剂中蓝色的变化。研究表明,数字图像处理能够检测滴定溶剂中的蓝色变化。采用颜色空间变换到HSV的数字图像处理方法对酸橙果实中的抗坏血酸含量进行了测量,结果表明,酸橙果实的抗坏血酸平均含量为0.037%,平均误差值为17.54%。
