Dysfunction of oxidant protection was observed with an oily diet, characterized by an increase in lipid hydroperoxide levels, a decrease in the SOD and catalase activity, and a decrease in the antioxidant activity of the entire glutathione chain. Administration of thiosulfonates, especially ETS and AATS, helped stabilize antioxidant protection.
