Slaughterperson competence has been regulated in SKKNI No. 196 of 2014 concerning Indonesian national work competency standards for the categories of agriculture, forestry and fisheries, main groups of livestock support services in the field of halal animal slaughter. However, what happens between understanding the material during training and practice in the field is not easy to implement. This study aims to explore the understanding gaps of halal butchers about the critical points of halal slaughter in poultry at UD Dragon Broiler, Bantul and Sinar Raya Abadi, Sleman. The research method used was qualitative through observational data collection techniques and direct interviews with the butchers in charge of slaughtering at the slaughterhouse. 摘要
屠宰人员在确定肉类的清真程度和质量方面发挥着重要作用。关于清真动物屠宰领域中农业、林业和渔业、畜牧业支持服务主要群体类别的印度尼西亚国家工作能力标准的 2014 年第 196 号 SKKNI 中对屠宰人员的能力做出了规定。然而,培训期间对教材的理解与实地实践之间的关系并不容易落实。本研究旨在探讨清真屠夫对班图尔 UD Dragon Broiler 和诗勒曼 Sinar Raya Abadi 的家禽清真屠宰关键点的理解差距。研究采用定性研究方法,通过观察数据收集技术和直接采访屠宰场负责屠宰的屠夫来进行。研究结果发现,UD Dragon Broiler 已经有一名经过认证的清真屠宰员,但他只是一名监督员,而不是屠宰员,屠宰场内没有任何包含清真屠宰系统程序的标语,只有 bismilah allahu akbar 字样,屠宰员的能力取决于经验,而 RPA Sinar Raya Abadi 还没有经过认证的清真屠宰员,屠宰场内有清真屠宰的 SOP,但数量很少,屠宰员的能力取决于经验。
