Modern packaging systems are crucial nowadays to address these problems and maximize the profitability of the food industry by extending the shelf life and storage of food products. Among these, active packaging is attracting greater attention as it prevents microbial attack and extends the storability of the products. Bacteriocins and proteinaceous toxins from bacteria, can be integrated into the food packaging materials. Though they have not been widely used in the food packaging sector, they have previously been acclaimed as a potential alternative to chemical preservation techniques. This review encompasses a wide range of bacteriocins used in food packaging to prevent microbial contamination.
