Fifty honey samples were analyzed for various physiochemical parameters every four months at room temperature. Initial values included pH, free acidity, electrical conductivity, diastase number, invertase number, HMF, proline content, fructose, glucose, and sucrose percentages. After 12 months, the pH, free acidity, electrical conductivity, diastase, invertase, glucose, and fructose values decreased, while HMF content, proline content, and sucrose percentage increased. These findings suggest that honey composition changes during storage, shortening its shelf life.
