The optimum process was 21.0 min, 180 mL/g liquid-to-material ratio, 2.07 h pepsin digestion time, and 2.20 h pancreatic digestion time, and the collagen yield was 80.17±1.38%, which was not significantly different from the predicted value (P<0.05).
