Based on a classical Sichuan cuisine text and analysis of the structural features of the text data in detail, the annotation specification of named entities and entity relationships of Sichuan cuisine are formulated; meanwhile, the annotation process is designed, and the entities and relationships in the Sichuan cuisine text are manually annotated and proofread in an annotation system. A corpus of entities and relationships for Sichuan cuisine is constructed, which contains 691 dishes, 8624 entities and 11,357 entity relationships, with the consistency of 0.87 and 0.83 for multiple rounds of annotation, respectively.
