The extraction process using NaOH will dissolve protein and lipid so that the proportion of calcium in the material will increase. This research were aimed to examine the effect of differences in time extraction using NaOH on the content and characteristics of nanocalsium cuttlefish bone, determine the particle size of nanocalcium cuttlefish bone and determine the extraction time in obtaining nanocalcium cuttlefish bone with the best ratio of calcium and phosphorus. The research method used was a Completely Randomized Design model and the data were processed using SPSS 16. Parametric data were analyzed using ANOVA and Honest Real Difference test. The research treatments were different durations of calcium extraction using NaOH, namely 1 h, 2 hrs, and 3 hrs. The parameters tested were yield, calcium content, phosphorus content, whiteness degree, moisture content, protein content, lipid content, ash content and particle size. The results showed that the longer the extraction (up to 3 hrs) can increase the yield, calcium content, phosphorus content, whiteness, and ash content, but decrease the protein content and lipid content (p<0.05). Nanocalcium cuttlefish bone with extraction times of 1 h, 2 hrs, and 3 hrs had different average particle sizes, that is 665.5; 686.8; and 616.4 nm.
