The research treatments were different durations of calcium extraction using NaOH, namely 1 h, 2 hrs, and 3 hrs. The parameters tested were yield, calcium content, phosphorus content, whiteness degree, moisture content, protein content, lipid content, ash content and particle size. The results showed that the longer the extraction (up to 3 hrs) can increase the yield, calcium content, phosphorus content, whiteness, and ash content, but decrease the protein content and lipid content (p<0.05). Nanocalcium cuttlefish bone with extraction times of 1 h, 2 hrs, and 3 hrs had different average particle sizes, that is 665.5; 686.8; and 616.4 nm.
