It presents results from a broader research carried out by the Study and Research Group: Work and Education at the Pedagogical Museum of the UESB. The redefi nition of worldwide regulatory standards in food production, as a consequence of the structural transformations of capitalism, brings consequences for the working processes in the dairy business. In this paper, we show how these changes take place in dairy industries.
