摘要

提出了一种基于数字图像处理和BP神经网络的猪肉新鲜度检测方法。屠宰鲜猪肉细胞呈椭圆形,光滑,在猪肉腐败过程中会发生明显变化。细胞的边缘会破裂并融合在一起,直到完全变形。将提取有关细胞形状的七个特征参数来表示腐败程度。然后根据猪肉新鲜度标准TVB-N进行设计,最后通过BP神经网络训练出特征参数。实验结果表明,利用细胞形状特征参数可以有效地检测新鲜程度。
