Curcuma longa rhizome contains linear diarylheptanoid, with molecules such as curcumin or derivatives of curcumin with different chemical groups called curcuminoids (2-6% of the rhizome). Curcuminoids contain 77% curcumin, 17% demethoxycurcumin, and 6% bisdemethoxycurcumin (Figure 1) [2,3]. Curcumin exhibits two tautomeric forms having a predominant keto form in neutral and acidic solutions, and stable enol form in alkaline medium [2]. Curcumin is the principal bioactive metabolite of Curcuma longa. From the ancient age, turmeric has been used for many ailments, particularly as an anti-inflammatory agent [2]. Curcumin tested as a potent antioxidant [4], besides it also shows the anti-inflammatory [5], antirheumatic [6], antimicrobial, antiproliferative [1], and anticancer [7] activities.
