Abstract

New functional dairy products containing ultrafine beetroot powders including nanosized fraction have been developed. The influence of X-ray irradiation on their acidity and pathogenic and normal microflora was determined. The potential possibility of using X-ray radiation for sterilizing products with the inclusion of plant nano- and microparticles has been revealed.
