{"title":"Caracterización y evaluación de colorantes de Monnina vargassi y Vaccinium floribundum por espectroscopia infrarroja FTIR-ATR y UV Visible","authors":"","doi":"10.33017/reveciperu2022.0013/","DOIUrl":null,"url":null,"abstract":"Polyphenols and anthocyanins have been determined in fresh native fruits of Vaccinium floribundum and Monnina vargassi, for which their pigments were extracted with 0.01% acidified methanol, filtered, concentrated, centrifuged, decanted and scored to a defined volume for later evaluation.The anthocyanin spectra were identified by FTIR-ATR and Visible UV spectroscopy and the content of total anthocyanins (CAT) was evaluated by the differential pH method, total polyphenols (PFT) by the Folin-Ciocalteu method, found in the Visible and UV spectra. FTIR - ATR strong absorption signals at different values of vibration frequencies (cm-1) that correspond to functional groups of anthocyanins. The highest value in CAT corresponds to the extract of alaybili and the lowest to the condorusa with 108.12 and 56.07 (mg of cyanidin 3-glucoside / 100 g of fresh weight) respectively. Similarly, the highest value in PFT corresponds to alaybili and the lowest to condorusa with 627.13 and 342.24 (mg of gallic acid / 100 g of fresh weight) respectively.
