Characterizing an Inhomogeneous Water-Carbohydrate Solution using its Optical Activity

Abstract

We report on the characterization of the depthdependent concentration gradient of an inhomogeneous water-sucrose solution and its evolution with time. The experimental method is simple and non-intrusive, being attractive for the characterization of liquid samples displaying optical activity.
