Abstract

The research was carried out in a fishing company in Sancti Spíritus, with the aim of improving the quality of the logistics system for the supply of aquaculture products, using predictive quality models. The proposal made it possible, with its partial implementation, to provide for the durability of fish products as a function of time and temperature of storage in the logistical supply system. In the course of the research and in designing the procedure, different methods and techniques were used: activity flow diagram, cause-effect diagram, Pareto chart, brainstorming, Delphi method, experiment design, quality index method, surveys, document consultation, among others.
