Abstract

Abstract Postharvest handling and processing of citrus fruits are economically important final steps in transferring fruit from the orchard to the consumer. Unlike most other fruit crops, a high percentage of the worldwide citrus crop is processed into frozen concentrated or single-strength juice products. This chapter deals with postharvest quality, harvesting and handling of citrus fruits, including the importance of biotic and abiotic problems, as well as packinghouse and processing techniques.
