Abstract

Abstract Postharvest handling and processing of citrus fruits are economically important final steps in transferring fruit from the orchard to the consumer. Unlike most other fruit crops, a high percentage of the worldwide citrus crop is processed into frozen concentrated or single-strength juice products. This chapter deals with postharvest quality, harvesting and handling of citrus fruits, including the importance of biotic and abiotic problems, as well as packinghouse and processing techniques. Issues on food safety for both fresh and processed citrus are also mentioned.
