Deep processing of these resources with the production of food additives allows not only to solve environmental problems for their disposal, but also to reduce the cost of food additives. The most promising by-products and secondary resources formed during the processing of agricultural raw materials, which are valuable sources for obtaining food additives, are given. Abstract

The level of food independence of the Russian Federation, achieved in 2021 has been assessed. It is noted that, despite positive trends, not all sectors of the food and processing industry show a stable growth in production.
