Chemoprotective components can be nutrients like, resistant starch, non-starch polysaccharides, oligosaccharides, folates, selenium, curcumin, zinc, or nonnutritive bioactive constituents such as protease inhibitors, saponins, phytosterols, lectins and phytates.
