The development of chemical residue analyses of archaeological materials such as ceramics, floors, and vats of production installations can provide essential data on the production and consumption of foodstuffs. In this paper, the potential as well as limitations of the most common techniques of this science will be discussed and an overview of the results so far obtained in different case studies at Roman and Late Antique sites of the western Mediterranean will be presented, with reference also to earlier and later periods in the case of the Italian and Iberian peninsulas.
