Abstract

The recently developed whole-column imaged capillary isoelectric focusing is an advanced technique for the pI determination of proteins. In this study, we initially applied this technique to determine the pI of peanut allergens and its antibody, rabbit IgG. Two main proteins, Ara h I and Ara h II, were found in the peanut allergen solution. Their pI values were determined to be about 4.5–4.7 and 5.1–5.6, respectively.
