The quality parameters of coconut cream such as zeta potential, viscosity, free fatty acid content were evaluated in this study. The results showed that the cream separator method with 1% surfactant HLB 5 and 3% sago starch produced coconut cream paste with a zeta potential of -30.5 mV and free fatty acid of 0.1%.
