Proton transfer reaction Time-of-Flight mass spectrometry (PTR-TOF-MS) was utilized to obtain the mass-resolved fingerprints of VOCs. The chemical formula of these VOC masses was tentatively identified. Abstract: The quality of the fruit is affected by several main ingredients and the aroma plays a fundamental role during the selection of fruit by consumers.
