Bread and public health.

Abstract

PUBLIC and official concern has, at times, been expressed at the use of &dquo; chemicals &dquo; in food, including bread. There are several aspects to this subject and chemicals may become incorporated from a number of sources. The use of insecticides, weed killers and fungicides by the farmer may lead to contamination, so may the use of insecticides by the miller or baker. I wish to confine my comments to chemicals which have been deliberately added
