Abstract

We have detected the emergence of luminescence in pectin hydrogel, the disappearance or weakening of some lines present in the spectra of dry samples in the Raman spectra of hydrogels, and the occurrence of new lines. This suggests the formation of complexes consisting of pectin‒water‒pectin units in the hydrogel, their presence being due to the appearance of hydrogen bonds in pectin gel.
