Effect of genetic variation in ACADM on slaughter and meat quality traits in Guizhou black goat

Male goats had an overall better slaughter performance than female goats, with significant differences in pre-slaughter live weight, carcass weight, net meat weight, slaughtering percentage, and the thickness of back fat (<em>P</em> &lt; 0.01). As for the meat quality traits, there were extremely significant differences in shear force (<em>P</em> &lt; 0.01), and significant differences in meat color (<em>a</em>* and <em>b</em>* values) and pH value (<em>P</em> &lt; 0.05) between male and female goats. The <em>ACADM</em> g.30914 G&gt;A polymorphism was significantly associated with intramuscular fat content (<em>P</em> &lt; 0.05).
