The rice samples included in this investigation contained 26 distinct fatty acid compounds; the most unsaturated fatty acids (33.51%) and least saturated fatty acids (65.7%) were found in rice at 3 months. Significantly more Na and Se were present in the rice at 3 months (97 and 12 ppm, respectively) than at 6 months (67 and 6 ppm).
