The indicator of рN environment is normally in the range of 5.0–7.5 and during the study it was in the range of 6.3–7.8. The results for the 3 years of the study were presented. In the 2.5–3rd year of storage, the amount of fungi and bacteria in the kiyama increased, and the results of the study in 2.5 years of storage were presented.
