Between January and August 2018 field observations were made to collect information regarding the industrial plant and the operational flow chart. Subsequently, an economic analysis carried out based on the operational cost of production methodology and economic efficiency indicators. It founded that the built area of the enterprise was 325.02 m2. The main processed species were: corvina (Cynoscion virescens), uritinga (Sciades proops), gó hake (Macrodon ancylodon), gurijuba (Sciades parkeri) and yellow hake (Cynoscion acoupa). The physical structure and operational flowchart of the processing were not in compliance with the regulation, mainly due to the lack of good manufacturing practices, standard hygiene procedures and hazard analysis and critical control points.
