Abstract

The management of industrial winemaking is a complex challenge since there is a lot of uncertainty from the vineyard to the winery. In particular, climate change has had a negative effect on the management of harvest dates and the winery's capacity. Digital tools like the Industrial Internet of things (IIoT) allow integrating the productive processes data and used it for decision-making.
