摘要

本文介绍了越南象芒果生长发育过程中生理生化参数变化的研究成果,从而确定了果实的生理成熟时间。结果表明,从果实形成到成熟,芒果色素、还原糖、淀粉、总有机酸、维生素C、蛋白质、脂肪、果胶和单宁含量以及α-淀粉酶、过氧化氢酶、过氧化物酶活性发生了显著变化。基于这些结果,我们得出结论,果实在树上完全成熟之前应在生理成熟(16周)时采收,以确保果实在储存期间的高营养价值和质量。
