Through its cultivation, the region of Arica and Parinacota seeks to develop the productive activity, and theindustry requires juvenile dorado for its development. The local supply considers obtaining low-cost, high-quality juveniles in Arica. Risk analysis and control of critical points is a management method for the identification, evaluation, and control of hazards in the field of food safety. The methodology has proven appropriate to ensure quality and has registered effects in reducing associated production costs. This research aims to create and validate a production management system based on risk analysis and control of critical points to obtain low-cost, high-quality juveniles.
