In this work, response surface methodology (RSM) was used to survey the response of culture conditions (temperature, degrees brix, time, and initial iron concentration) to the bioaccumulation of ferric ion (Fe 3+ ) in yeast ( Saccharomyces pastorianus ). On the other hand, the Box-Behnken design was used to determine the optimum conditions of 24 o C, 13 o Bx of the culture solid content for 49 h incubation and 656 ppm of initial iron concentration. The total Fe 3+ content in the biomass was significantly affected by the culture temperature and degrees brix (p<0.0001). Under optimum conditions, the maximum level of Fe (III) ions in the dry cell weight of S. pastorianus was 16.82±0.65 mg/g.
